  • 1 tablespoon cornstarch (optional, for thicker sauce)
  • Whipped cream or vanilla ice cream (for serving, optional)

Instructions

Step 1: Prepare the Apple Filling

  • Start by peeling and slicing the apples into thin, bite-sized pieces.

  • In a skillet over medium heat, melt 1/2 cup of butter. Once melted, add the apples and stir to coat them in the butter.

  • Add 3/4 cup of granulated sugar, 1 tablespoon of cinnamon, 1 teaspoon of vanilla extract, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt. Stir the mixture well.

  • Cook for about 5-7 minutes, stirring occasionally, until the apples begin to soften and release their juices. Remove from heat.

Step 2: Prepare the Sauce

  • In a separate saucepan, combine 1/2 cup of brown sugar, 1/2 teaspoon of cinnamon, 1 cup of heavy cream, and 1/2 cup of water.

  • Heat over medium heat, stirring until the sugar has dissolved and the mixture starts to simmer. Allow it to cook for 2-3 minutes.

  • If you want a thicker sauce, mix 1 tablespoon of cornstarch with a small amount of water to make a slurry, then add it to the sauce. Stir well to combine.

  • Let the sauce simmer for another 5-7 minutes until it thickens slightly. Remove from heat and set aside.

Step 3: Assemble the Enchiladas

  • Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish.

  • Lay a tortilla flat on a clean surface. Spoon about 1/4 cup of the apple mixture into the center of the tortilla.

  • Roll the tortilla tightly around the apple mixture, like a traditional enchilada, and place it seam side down in the prepared baking dish.

  • Repeat with the remaining tortillas and apple mixture, placing the rolled tortillas snugly in the dish.

Step 4: Pour the Sauce Over the Enchiladas

  • Once all the enchiladas are rolled and in the baking dish, pour the sauce evenly over the top of the tortillas.

  • Use a spoon or spatula to spread the sauce over the enchiladas, ensuring that they are well-covered.

Step 5: Bake and Serve

  • Bake the Apple Pie Enchiladas in the preheated oven for 25-30 minutes, or until the tortillas are golden and the sauce is bubbling.
