  • 1 lb (450g) fresh salmon fillet, skin removed

  • 1/2 cup breadcrumbs (or almond flour for a gluten-free option)

  • 1 large egg

  • 2 cloves garlic, minced

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cup green onions, finely chopped

  • 1 tsp lemon zest

  • 1 tbsp lemon juice

  • 1/2 tsp smoked paprika

  • 1/2 tsp salt (or to taste)

  • 1/4 tsp black pepper

  • 1 tbsp olive oil (for greasing the baking sheet)

Ingredients for the Creamy Avocado Sauce:

  • 1 ripe avocado

  • 1/4 cup Greek yogurt (or sour cream)

  • 1 clove garlic

  • 2 tbsp fresh cilantro (or parsley)

  • 1 tbsp lime juice

  • 2 tbsp olive oil

  • 1/4 tsp salt (or to taste)

  • 1/4 tsp black pepper

  • 23 tbsp water (to adjust consistency)


Instructions

Step 1: Prepare the Salmon

  1. Preheat your oven to 375°F (190°C).
  2. Cut the salmon fillet into small chunks and place them in a food processor. Pulse until the salmon is finely chopped but not pureed.

Step 2: Mix the Meatball Ingredients

  1. In a large mixing bowl, combine the chopped salmon, breadcrumbs, egg, minced garlic, parsley, green onions, lemon zest, lemon juice, smoked paprika, salt, and black pepper.
  2. Mix gently until all ingredients are well combined. Avoid overmixing to keep the meatballs tender.

Step 3: Shape the Meatballs

  1. Lightly grease your hands with olive oil to prevent sticking.
  2. Scoop about 1-2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used.
  3. Place the meatballs on a lined baking sheet, spacing them about 1 inch apart.

Step 4: Bake the Meatballs

  1. Bake in the preheated oven for 15-18 minutes, or until the meatballs are cooked through and lightly golden on the outside.
  2. Remove from the oven and let them cool slightly.

Step 5: Prepare the Creamy Avocado Sauce

  1. While the meatballs are baking, prepare the sauce. In a food processor, combine the avocado, Greek yogurt, garlic, cilantro, lime juice, olive oil, salt, and black pepper.
