Instructions
Step 1: Prepare the Salmon
- Preheat your oven to 375°F (190°C).
- Cut the salmon fillet into small chunks and place them in a food processor. Pulse until the salmon is finely chopped but not pureed.
Step 2: Mix the Meatball Ingredients
- In a large mixing bowl, combine the chopped salmon, breadcrumbs, egg, minced garlic, parsley, green onions, lemon zest, lemon juice, smoked paprika, salt, and black pepper.
- Mix gently until all ingredients are well combined. Avoid overmixing to keep the meatballs tender.
Step 3: Shape the Meatballs
- Lightly grease your hands with olive oil to prevent sticking.
- Scoop about 1-2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used.
- Place the meatballs on a lined baking sheet, spacing them about 1 inch apart.
Step 4: Bake the Meatballs
- Bake in the preheated oven for 15-18 minutes, or until the meatballs are cooked through and lightly golden on the outside.
- Remove from the oven and let them cool slightly.
Step 5: Prepare the Creamy Avocado Sauce
- While the meatballs are baking, prepare the sauce. In a food processor, combine the avocado, Greek yogurt, garlic, cilantro, lime juice, olive oil, salt, and black pepper.
- Blend until smooth, adding water as needed to achieve your desired consistency.
