- For the Salmon Bites:
- 1 lb fresh salmon fillet, skinless and cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 tsp garlic powder

- For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust based on spice preference)
- 1 tbsp honey
- 1 tsp rice vinegar or lemon juice
Instructions
Step 1: Prepare the Salmon
Start by cutting the salmon fillet into bite-sized pieces. Ensure that the pieces are uniform in size for even cooking. You can remove the skin if it’s still attached.
Step 2: Prepare the Dry Coating
In a large mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, onion powder, salt, and pepper. Stir to combine all the dry ingredients thoroughly.
Step 3: Dip the Salmon Pieces
Dip each piece of salmon into the buttermilk (or milk). Once coated, dredge the salmon pieces in the flour mixture, making sure each piece is evenly coated.
Step 4: Cook the Salmon
You can choose to either fry or bake the salmon bites:
- For frying: Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the salmon pieces and cook for 2-3 minutes per side until golden and crispy. Drain on paper towels to remove excess oil.
- For baking: Preheat your oven to 400°F (200°C). Place the coated salmon pieces on a baking sheet lined with parchment paper, and lightly spray them with cooking spray. Bake for 10-12 minutes, or until golden and crispy.
Step 5: Make the Bang Bang Sauce
In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Whisk together until smooth and creamy. Taste and adjust the level of heat and sweetness by adding more sriracha or honey, depending on your preference.
