Ingredients
For the Roast Beef:

3–4 lbs beef chuck roast (or rump roast)

1 onion, sliced

3 cloves garlic, minced

2 cups beef broth

1 tbsp Worcestershire sauce

For the Gravy (Optional):

1/4 cup cold water
Instructions
Step 1: Prepare the Meat

Pat the beef roast dry with paper towels.

Season all sides with salt, black pepper, smoked paprika, rosemary, and thyme.
Step 2: Sear the Beef (Optional but Recommended)

Heat olive oil in a large skillet over medium-high heat.

Sear the roast for about 3-4 minutes per side until browned.

Remove from heat and set aside.
Step 3: Prepare the Vegetables

Slice the onions and mince the garlic.

Chop carrots, potatoes, and celery.

Place them at the bottom of the crock pot.
Step 4: Assemble in the Crock Pot

Add the seared beef roast on top of the vegetables.

Pour in beef broth, Worcestershire sauce, soy sauce, and balsamic vinegar.

Add tomato paste and mix gently.

Cover and cook on LOW for 8-10 hours or HIGH for 4-6 hours.
Step 5: Make the Gravy (Optional)

Remove 1-2 cups of liquid from the crock pot and place in a saucepan.

Mix cornstarch with cold water and whisk into the sauce.

Simmer until thickened, then pour over the roast before serving.
