  • Author: Jasmine
  • Total Time: 50 minutes

Ingredients

Scale

Main Ingredients:

  • 1 ½ cups fresh or frozen blueberries – Antioxidant-rich and naturally sweet
  • 1 cup cottage cheese (full-fat or low-fat) – Adds protein and moisture
  • 2 large eggs – For structure and protein
  • 1 ½ cups rolled oats – For fiber and a hearty texture
  • 1/4 cup honey or maple syrup – Natural sweetness
  • 1 tsp vanilla extract – Adds depth of flavor
  • 1/2 tsp ground cinnamon – For warmth and aroma
  • 1/4 tsp salt – To balance flavors
  • 1/2 tsp baking powder – For lightness
  • 3/4 cup milk (dairy or plant-based) – For moisture
  • 2 tbsp melted coconut oil or butter – For richness

Optional Add-ins:

  • Chia seeds or flaxseeds (1-2 tbsp) – For added fiber and omega-3s
  • Sliced almonds or walnuts (1/4 cup) – Adds crunch
  • Zest of 1 lemon – For a citrusy twist

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Grease your baking dish with non-stick cooking spray, butter, or coconut oil. Set aside.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, combine:
  • Rolled oats
  • Baking powder
  • Cinnamon
  • Salt
  • Stir together until everything is evenly distributed.

Step 3: Blend the Wet Ingredients

  • In a medium bowl or blender, mix:
  • Eggs
  • Cottage cheese
  • Honey or maple syrup
  • Milk
  • Vanilla extract
  • Melted coconut oil
  • Blend until smooth, or whisk by hand if you prefer a chunkier texture.

Step 4: Combine and Fold

  • Pour the wet mixture into the bowl with the dry ingredients. Mix until well combined. Gently fold in the blueberries. If using frozen blueberries, toss them in a little flour first to prevent them from sinking.

Step 5: Bake to Perfection

  • Pour the batter into your greased baking dish. Spread it evenly. Optionally, sprinkle extra blueberries or nuts on top. Bake for 35–40 minutes, or until the top is golden brown and a toothpick comes out clean from the center.
  • Let cool for at least 10 minutes before slicing and serving. Serve warm, at room temperature, or chilled.
