Ingredients
-
2 cups cooked chicken breast (shredded or diced)
-
1/2 cup mayonnaise (use full-fat for creaminess)
-
1/4 cup sour cream (optional, for extra tang)
-
1 tablespoon Dijon mustard
-
1 tablespoon lemon juice (freshly squeezed)
-
1/4 cup finely chopped celery
-
1/4 cup finely chopped red onion
-
1/4 cup chopped pickles or relish (optional, for added crunch)
-
1/4 teaspoon garlic powder
-
1/4 teaspoon onion powder
-
Salt and pepper to taste
-
1/4 cup chopped pecans or almonds (optional, for texture)
-
1 tablespoon fresh parsley or dill (optional, for garnish)
Instructions
Step 1: Prepare the Chicken
If you don’t have pre-cooked chicken, boil or bake 2 chicken breasts until fully cooked. Let them cool, then shred or dice them into small pieces.
Step 2: Mix the Dressing
In a large bowl, whisk together the mayonnaise, sour cream (if using), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. This creates the creamy base for your chicken salad.
Step 3: Add the Vegetables
Stir in the chopped celery, red onion, and pickles (or relish). These add crunch and flavor to the salad.
Step 4: Combine Chicken and Dressing
Add the shredded or diced chicken to the bowl. Gently fold it into the dressing mixture until everything is well-coated.
Step 5: Add Optional Ingredients
If you’re using nuts or fresh herbs, stir them in at this stage. Taste and adjust seasoning if needed.
