Ingredients
- 1 cup (2 sticks/226g) unsalted butter, softened to room temperature
- 4 cups (480g) confectioners’ sugar (powdered sugar), sifted
- 2–3 tablespoons heavy cream or milk
- 2 teaspoons pure vanilla extract (use clear vanilla extract for whiter frosting)
- ¼ teaspoon salt (to balance sweetness)
- Optional: 1-2 drops of desired food coloring
Pro tip: Using room temperature butter is non-negotiable for a smooth homemade frosting. Cold butter creates lumps, while overly soft butter produces a greasy texture.
Instructions
Step 1: In a large bowl or stand mixer fitted with the paddle attachment, beat the softened butter on medium speed for 2-3 minutes until very light and fluffy. This crucial step incorporates air for that perfect fluffy buttercream texture.
Step 2: Add confectioners’ sugar one cup at a time, mixing on low speed initially to prevent a sugar cloud, then increasing to medium speed. Scrape down the sides of the bowl after each addition.
Step 3: Pour in the vanilla extract and salt, then beat on medium speed for 30 seconds to combine thoroughly.
Step 4: Add 2 tablespoons of heavy cream or milk and beat on medium-high speed for 3-4 minutes until the frosting becomes incredibly light and fluffy. For a softer consistency, add the remaining tablespoon of cream if needed.
Step 5: If using food coloring, add 1-2 drops and mix until evenly distributed. If creating multiple colors, divide the frosting into separate bowls first, then color individually.
