  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 medium carrot, sliced
  • 1 bell pepper, chopped
  • 1 can (14 oz) coconut milk
  • 4 cups fish or vegetable broth
  • 1 lime, juiced (reserve zest for garnish)
  • 12 tbsp fish sauce (optional for added flavor)
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions

Step 1: Heat the Olive Oil

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, add the chopped onion and sauté until softened and translucent, about 4 minutes.

Step 2: Add Garlic and Ginger

Add the minced garlic and grated ginger to the pot and sauté for another 1-2 minutes, allowing the aromatic flavors to release.

Step 3: Cook the Vegetables

Next, add the sliced carrot and chopped bell pepper. Stir well and cook for 5 minutes until the vegetables begin to soften.

Step 4: Add Broth and Coconut Milk

Pour in the fish or vegetable broth and coconut milk. Stir everything together, bring the mixture to a gentle simmer, and let it cook for 10 minutes so the flavors can meld.

Step 5: Add the Fish and Lime Juice

 

Add the fish pieces to the pot and cook for another 5-7 minutes until the fish is tender and opaque. Stir in the lime juice and season with salt and pepper to taste.
