Ingredients
- Black beans – 1 can, drained and rinsed
- Corn kernels – 1 cup (fresh, frozen, or canned)
- Roma tomatoes – 2, diced
- Red onion – 1 small, finely chopped
- Bell pepper – 1 (red or yellow), diced
- Cilantro – ¼ cup, chopped
- Jalapeño – 1, deseeded and minced (optional for heat)
- Avocado – 1, diced (optional, but highly recommended for creaminess)
- Lime juice – 2 tbsp (freshly squeezed)
- Olive oil – 2 tbsp
- Red wine vinegar – 1 tbsp
- Honey – 1 tsp
- Garlic powder – 1 tsp
- Chili powder – 1 tsp (optional, for extra flavor)
- Salt and pepper – to taste
Instructions
Step 1: Prepare the Ingredients
Start by chopping the vegetables. Dice the tomatoes, bell pepper, and red onion. Remove the seeds from the jalapeño (if using) and finely mince it. Cube the avocado and chop the cilantro. Drain and rinse the black beans and corn.
Step 2: Mix the Vegetables and Beans
In a large mixing bowl, combine the black beans, corn, tomatoes, red onion, bell pepper, and cilantro. Toss everything together to distribute the ingredients evenly.
Step 3: Prepare the Dressing
In a small bowl, whisk together the lime juice, olive oil, red wine vinegar, honey, garlic powder, chili powder, salt, and pepper. Taste and adjust seasoning if needed.
Step 4: Combine the Dressing with the Salad
Pour the dressing over the vegetable and bean mixture. Stir gently until all the ingredients are coated evenly with the dressing.
Step 5: Add Avocado and Serve
Gently fold in the diced avocado, being careful not to mash it. Serve immediately with tortilla chips or as a topping for tacos, salads, or grilled meats. Enjoy your Cowboy Caviar!
