Ingredients
- 1 ripe avocado, peeled and pitted
- 1 cup fresh cilantro, loosely packed (leaves and tender stems)
- 2 cloves garlic, minced
- ¼ cup freshly squeezed lime juice (about 2 limes)
- ¼ cup olive oil (or avocado oil for extra richness)
- 2–4 tablespoons water, to thin as needed
- ½ teaspoon ground cumin
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1 tablespoon honey or maple syrup (optional, to balance tartness)
- ½ jalapeño pepper, seeded (optional, for a spicy kick)
Instructions
Step 1: Prep Your Ingredients
Wash and dry the cilantro thoroughly. Peel and pit the avocado. Juice your limes, mince the garlic, and gather all ingredients to make the blending process smooth and quick.
Step 2: Add Ingredients to Blender
In a high-speed blender or food processor, combine the avocado, cilantro, lime juice, garlic, olive oil, ground cumin, salt, pepper, and optional honey or jalapeño. Add 2 tablespoons of water to start.
Step 3: Blend Until Smooth
Blend the mixture until it becomes creamy and smooth. Pause to scrape down the sides with a spatula as needed. If the dressing is too thick, add more water, 1 tablespoon at a time, until you reach the desired consistency.
Step 4: Taste and Adjust
Taste your dressing and adjust the seasoning. You can add more salt, lime juice for tanginess, or honey to mellow the flavor. If you like it spicier, add more jalapeño or a pinch of cayenne.
Step 5: Store or Serve Immediately
Use the dressing right away or transfer it to an airtight container. Store it in the refrigerator for up to 5 days. It may thicken upon chilling—just stir or shake before using.
