Ingredients
For the Lobster:

2 (1.5 lb) whole lobsters (or 1 lb cooked lobster meat)

4 cups water (for boiling)

1 tbsp salt

1 lemon (halved)
For the Pasta:

1 lb elbow macaroni (or cavatappi, shells)

4 tbsp butter (divided)

1 tsp salt
For the Cheese Sauce:

4 tbsp butter

¼ cup all-purpose flour

3 cups whole milk (warmed)

1 cup heavy cream
-
2 cups sharp cheddar (shredded)

1 cup Gruyère cheese (shredded)

½ cup Parmesan cheese (grated)

1 tsp Dijon mustard
-
½ tsp smoked paprika
-
¼ tsp nutmeg

Salt & black pepper to taste
For the Topping (Optional):

½ cup Panko breadcrumbs

2 tbsp melted butter
-
2 tbsp chopped parsley
Instructions
Step 1: Cook the Lobster

Bring 4 cups water to a boil with 1 tbsp salt and lemon halves.

Add live lobsters headfirst, cover, and boil for 8-10 mins (for 1.5 lb lobsters).

Remove, cool, then extract meat from claws, tail, and knuckles. Chop into bite-sized pieces.
Step 2: Cook the Pasta

Boil 1 lb macaroni in salted water until al dente (1 min less than package time).

Drain, toss with 2 tbsp butter, and set aside.
Step 3: Make the Cheese Sauce

Melt 4 tbsp butter in a saucepan over medium heat.

Whisk in ¼ cup flour to form a roux (cook 1-2 mins).

Slowly add warm milk + cream, whisking constantly.

Stir in mustard, paprika, nutmeg, salt & pepper.

Reduce heat, add cheddar, Gruyère, and Parmesan until melted.
Step 4: Combine & Bake

Mix pasta, lobster, and cheese sauce in a baking dish.

(Optional) Top with buttered Panko breadcrumbs.

Bake at 375°F for 15-20 mins until bubbly.

Broil 2-3 mins for a golden crust.
