Instructions

Step 1: Prep the Salmon

Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper. This helps the salmon sear beautifully and enhances its flavor.

Step 2: Sear the Salmon

Heat olive oil in a large skillet over medium-high heat. Add salmon, skin-side down, and cook for about 4–5 minutes until the skin is crispy. Flip and cook the other side for 3–4 minutes until golden and just cooked through. Remove salmon and set aside.

Step 3: Sauté Garlic and Tomatoes

In the same pan, lower the heat to medium and add butter. Once melted, add minced garlic and sauté until fragrant (about 30 seconds). Stir in chopped sun-dried tomatoes and cook for another minute.

Step 4: Create the Creamy Sauce

Pour in heavy cream and stir well to combine. Let it simmer gently for 2–3 minutes until slightly thickened. Add Parmesan cheese and stir until melted and the sauce becomes velvety. Sprinkle in Italian seasoning and taste for salt and pepper.

Step 5: Add Spinach and Salmon Back

Add fresh spinach to the sauce and stir until wilted. Carefully place the cooked salmon back into the pan, spooning sauce over the top. Let everything simmer together for another 2–3 minutes to meld flavors.
