Ingredients
- 1 lb large shrimp (peeled and deveined)
- 8 oz spaghetti or linguine pasta
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic (minced)
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper (to taste)
- Grated Parmesan cheese (optional, for topping)
Instructions
Start by bringing a large pot of salted water to a boil. Add your pasta (spaghetti or linguine) and cook it according to the package directions until it’s al dente. Once cooked, reserve about 1/2 cup of pasta water for later use, and then drain the pasta using a colander.
While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the shrimp to the pan in a single layer. Cook the shrimp for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the pan and set them aside on a plate.
In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, then add the minced garlic. Sauté the garlic for about 1 minute, or until it becomes fragrant, being careful not to burn it. If you like a little spice, add the red pepper flakes to the pan at this point.
Pour in the white wine (or chicken broth if you prefer a non-alcoholic version), scraping up any browned bits from the bottom of the skillet. Add the lemon juice and bring the mixture to a simmer. Let it cook for about 2 minutes to allow the sauce to reduce slightly.
Return the cooked shrimp to the skillet, stirring to coat them in the sauce. Then add the drained pasta to the pan, tossing it gently to combine everything. If the sauce seems too thick, you can add a little bit of the reserved pasta water to achieve your desired consistency.
