2 cups all-purpose flour
-
1 teaspoon baking powder
-
1/2 teaspoon baking soda
-
1/2 teaspoon salt
-
1/2 cup unsalted butter, softened
-
3/4 cup granulated sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
For the Apple Filling:
-
2 medium apples (peeled, cored, and diced)
-
1/4 cup brown sugar
-
1 teaspoon ground cinnamon
For the Cinnamon Swirl:
-
1/4 cup granulated sugar
-
1 teaspoon ground cinnamon
For the Glaze (Optional):
-
1/2 cup powdered sugar
-
1–2 tablespoons milk
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
In a medium bowl, combine the diced apples, brown sugar, and cinnamon. Mix well and set aside.
In a small bowl, mix 1/4 cup granulated sugar and 1 teaspoon cinnamon. Set aside.
In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
Pour half of the batter into the prepared loaf pan. Sprinkle half of the apple filling and half of the cinnamon swirl mixture over the batter. Repeat with the remaining batter, apples, and cinnamon swirl. Use a knife to gently swirl the layers together.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
Whisk together powdered sugar and milk until smooth. Drizzle over the cooled bread before serving.
