Instructions
Step 1: Prepare the Bruschetta Topping
In a medium bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and then gently stir in the chopped basil. Cover and set aside, allowing the flavors to meld while you prepare the chicken.
Step 2: Season the Chicken
Place the chicken breasts on a cutting board. If they are thick, pound them to even thickness for uniform cooking. Drizzle olive oil over each breast and rub to coat. Sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper on both sides.
Step 3: Cook the Chicken
Grilling Method: Preheat grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.
Pan-Searing Method: Heat a large skillet over medium heat and add a drizzle of oil. Sear the chicken for 5-6 minutes per side until golden and cooked through.
Baking Option: Preheat oven to 400°F and bake for 22-25 minutes, flipping halfway.
Step 4: Add Optional Cheese
Once cooked, if using cheese, sprinkle shredded mozzarella or parmesan on the hot chicken and allow it to melt for a minute or two.
Step 5: Top and Serve
Spoon the fresh bruschetta mixture generously over each chicken breast. For extra flair, drizzle with balsamic glaze and sprinkle with more basil or cheese before serving.
