For the Salad:

1 lb (16 oz) cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup pepperoni slices, halved (optional)

1/2 cup mozzarella cheese, cubed

1/4 cup fresh basil or parsley, chopped

For the Dressing:

1/3 cup olive oil

3 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 garlic clove, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Instructions
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions (usually 7-10 minutes). Drain and rinse under cold water to stop the cooking process.
While the tortellini is cooking, chop the cherry tomatoes, cucumber, red onion, and fresh herbs. Slice the black olives and pepperoni (if using).
In a medium bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper. Adjust seasoning to taste.
In a large mixing bowl, combine the cooked tortellini, chopped vegetables, pepperoni, mozzarella cubes, and fresh herbs. Pour the dressing over the salad and toss gently to coat everything evenly.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold and enjoy!
