Instructions
If using fresh corn, remove the kernels from the cob. For frozen corn, thaw it completely. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Add the corn kernels and cook for 5-7 minutes, stirring occasionally, until they are slightly charred. This step adds a smoky flavor that mimics Chipotle’s grilled corn.
While the corn is cooking, finely dice the red onion and jalapeños. Remove the seeds from the jalapeños if you prefer a milder salsa. Chop the cilantro finely.
In a large mixing bowl, combine the charred corn, diced red onion, jalapeños, and cilantro. Mix well to ensure even distribution of ingredients.
Squeeze fresh lime juice over the mixture. Add salt, black pepper, and chili powder (if using). Stir thoroughly to coat all the ingredients with the seasoning.
Allow the salsa to sit for at least 15-20 minutes before serving. This resting time helps the flavors meld together, making the salsa even more delicious.
