Easy Cilantro Lime Rice in Rice Cooker

  • 1 cup long-grain white rice (or basmati/jasmine rice)
  • 1 ¾ cups water (or chicken/vegetable broth for extra flavor)
  • 1 tablespoon unsalted butter (or olive oil)
  • 1 teaspoon salt (adjust to taste)
  • Zest of 1 lime
  • Juice of 12 limes (about 23 tablespoons)
  • ½ cup fresh cilantro, finely chopped
  • 1 garlic clove, minced (optional, for added flavor)

Instructions

Step 1: Rinse the Rice

Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

Step 2: Add Rice and Water to the Rice Cooker

Add the rinsed rice, water (or broth), butter (or oil), and salt to the rice cooker. Stir gently to combine.

Step 3: Cook the Rice

Close the rice cooker lid and set it to the “White Rice” or “Cook” setting. Let the rice cook completely without opening the lid.

Step 4: Prepare the Lime and Cilantro Mixture

While the rice is cooking, zest and juice the lime(s). Finely chop the cilantro and mince the garlic (if using).

Step 5: Fluff and Mix

Once the rice is cooked, let it sit for 5 minutes. Then, open the lid and fluff the rice with a fork. Add the lime zest, lime juice, chopped cilantro, and minced garlic. Gently mix until well combined.
