Ingredients
- 1 lb ground pork (or chicken, turkey, or beef)
- 2 tablespoons sesame oil (divided)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
- 1 small head green cabbage, shredded (or 4 cups coleslaw mix)
- 2 large carrots, shredded
- 1/4 cup soy sauce (or tamari for gluten-free option)
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional, for heat)
- 2 green onions, chopped
- Salt and pepper, to taste
- Toasted sesame seeds (for garnish)
- Optional toppings: crispy wonton strips, chili flakes, or a drizzle of hoisin sauce
Instructions
Step 1: Brown the Meat
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the ground pork (or your chosen meat) and cook, breaking it apart with a wooden spoon until fully browned and cooked through—about 5–7 minutes. Season with a little salt and pepper. Remove from skillet and set aside.
Step 2: Sauté Aromatics
In the same pan, add the remaining tablespoon of sesame oil. Toss in the chopped onion and cook for 2–3 minutes until translucent. Add the garlic and ginger, stirring continuously for 1 minute, or until fragrant. Be careful not to burn them.
Step 3: Add the Veggies
Now it’s time to add the cabbage and carrots. If using coleslaw mix, add about 4 cups. Stir to coat the vegetables in the oil and aromatics, and cook for 5–7 minutes until the cabbage softens slightly but still has a nice crunch.
Step 4: Stir in Sauce & Combine
Return the browned meat to the skillet. Pour in the soy sauce, rice vinegar, and sriracha (if using). Stir everything together thoroughly so the flavors meld. Allow the mixture to cook for another 3–4 minutes so it absorbs the sauce.
Step 5: Garnish and Serve
Turn off the heat and stir in chopped green onions. Taste and adjust seasoning if needed—add more soy sauce for salt, sriracha for heat, or a splash of vinegar for tang. Garnish with sesame seeds and serve hot.
