-
4 cups water
-
1 tbsp salt
-
1 lemon (halved)
For the Pasta:
-
12 oz pasta (linguine or fettuccine works best)
-
4 tbsp unsalted butter
-
4 garlic cloves (minced)
-
1 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1/4 cup white wine (optional)
-
1 tbsp olive oil
-
Salt and pepper to taste
-
Fresh parsley (chopped, for garnish)
-
Red pepper flakes (optional, for a hint of spice)
Instructions
Step 1: Prepare the Lobster
- Bring 4 cups of water to a boil in a large pot. Add 1 tbsp salt and the halved lemon.
- Carefully place the live lobsters into the boiling water headfirst. Cover and cook for 8-10 minutes until the shells turn bright red.
- Remove the lobsters using tongs and let them cool. Once cooled, crack the shells and remove the meat. Chop the lobster meat into bite-sized pieces.
Step 2: Cook the Pasta
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- Drain the pasta in a colander, reserving 1/2 cup of pasta water for the sauce.
Step 3: Make the Sauce
- In a medium saucepan, melt 4 tbsp butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in 1/4 cup white wine (if using) and let it simmer for 2 minutes to reduce.
- Add 1 cup heavy cream and stir gently. Let the sauce simmer for 3-4 minutes until it thickens slightly.
- Stir in 1/2 cup grated Parmesan cheese until melted and smooth.
Step 4: Combine Lobster and Pasta
- Add the chopped lobster meat to the sauce and stir to coat. Cook for 2-3 minutes until the lobster is heated through.
- Toss the cooked pasta into the sauce, adding reserved pasta water as needed to reach your desired consistency.
Step 5: Garnish and Serve
- Season with salt, pepper, and red pepper flakes (if desired).
- Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese.
