For the Lobster:

  • 2 whole lobsters (about 1.5 lbs each)

  • 4 cups water

  • 1 tbsp salt

  • 1 lemon (halved)

For the Pasta:

  • 4 tbsp unsalted butter

  • 4 garlic cloves (minced)

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup white wine (optional)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Fresh parsley (chopped, for garnish)

  • Red pepper flakes (optional, for a hint of spice)


Instructions

Step 1: Prepare the Lobster

  1. Bring 4 cups of water to a boil in a large pot. Add 1 tbsp salt and the halved lemon.
  2. Carefully place the live lobsters into the boiling water headfirst. Cover and cook for 8-10 minutes until the shells turn bright red.
  3. Remove the lobsters using tongs and let them cool. Once cooled, crack the shells and remove the meat. Chop the lobster meat into bite-sized pieces.

Step 2: Cook the Pasta

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander, reserving 1/2 cup of pasta water for the sauce.

Step 3: Make the Sauce

  1. In a medium saucepan, melt 4 tbsp butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in 1/4 cup white wine (if using) and let it simmer for 2 minutes to reduce.
  3. Add 1 cup heavy cream and stir gently. Let the sauce simmer for 3-4 minutes until it thickens slightly.
  4. Stir in 1/2 cup grated Parmesan cheese until melted and smooth.

Step 4: Combine Lobster and Pasta

  1. Add the chopped lobster meat to the sauce and stir to coat. Cook for 2-3 minutes until the lobster is heated through.
  2. Toss the cooked pasta into the sauce, adding reserved pasta water as needed to reach your desired consistency.

Step 5: Garnish and Serve

  1. Season with salt, pepper, and red pepper flakes (if desired).
  2. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese.
