Wet Ingredients
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mango puree (fresh or canned)
Optional Add-Ins
- 1/2 cup white chocolate chips
- 1/4 cup dried mango pieces (chopped)
Instructions
Preheat your oven to 350°F (175°C). Line your baking tray with parchment paper or a silicone mat.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Use an electric mixer for best results.
Beat in the egg, vanilla extract, and mango puree until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the white chocolate chips and dried mango pieces if using.
Using a cookie scoop or tablespoon, drop dough onto the prepared baking tray, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a cooling rack. Serve warm or at room temperature.
