Instructions
Wash the tomatoes thoroughly under cold water. If using larger tomatoes, cut them into bite-sized pieces or slices. For cherry or grape tomatoes, you can leave them whole or halve them for more flavor absorption.
In a large mixing bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, black pepper, sugar, and red pepper flakes (if using). Mix until well combined.
Add the prepared tomatoes to the bowl with the marinade. Gently toss to ensure all the tomatoes are evenly coated.
Sprinkle the chopped basil, parsley, and dried oregano over the tomatoes. Toss again to distribute the herbs evenly.
Transfer the mixture to an airtight container or jar. Let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
