Ingredients
- 1 cup white rice (short-grain or medium-grain works best)
- 4 cups whole milk (for creaminess)
- 1 cup water
- 1 cinnamon stick (or 1 teaspoon ground cinnamon)
- 1 cup granulated sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 can (12 oz) evaporated milk (optional, for extra richness)
- 1 can (14 oz) sweetened condensed milk
- Ground cinnamon or cinnamon sticks for garnish
- Raisins (optional, for added texture)
Instructions
Start by rinsing the rice under cold water until the water runs clear. This removes excess starch and prevents the pudding from becoming too sticky.
In a medium saucepan, combine the rinsed rice, water, and cinnamon stick. Bring to a boil over medium heat, then reduce the heat to low and let it simmer until the rice is tender and the water is absorbed (about 15-20 minutes).
Once the rice is cooked, add the whole milk and evaporated milk (if using). Stir gently to combine. Let the mixture simmer on low heat, stirring occasionally to prevent sticking.
After about 10 minutes, add the sweetened condensed milk and granulated sugar. Stir well to ensure the sugar dissolves completely. Continue cooking until the mixture thickens to your desired consistency (about 20-25 minutes).
Remove the saucepan from the heat and stir in the vanilla extract. If you’re using raisins, add them at this stage.
Transfer the Arroz con leche to serving bowls or glasses. Sprinkle ground cinnamon on top or add a cinnamon stick for garnish. Serve warm or chilled, depending on your preference.
