Instructions
Preheat your oven to 375°F (190°C). This ensures your pizza bakes evenly and gets that perfect crispy texture.
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat, then add the taco seasoning (store-bought or homemade) and a splash of water. Stir well and let it simmer for 2-3 minutes. Set aside.
Place two tortillas on a baking sheet. Spread a layer of refried beans evenly over each tortilla. Top with the seasoned ground beef and a generous amount of shredded cheddar and Monterey Jack cheese.
Place the remaining two tortillas on top of the cheese-covered tortillas to create a “sandwich” effect. Press gently to secure the layers.
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the edges are golden brown.
Remove the pizza from the oven and let it cool for 2-3 minutes. Top with diced tomatoes, black olives, green onions, cilantro, and jalapeños (if using). Drizzle with sour cream and salsa if desired.
Cut the Mexican Pizza into wedges using a pizza cutter or sharp knife. Serve immediately and enjoy!
