For the Chicken:

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 1 cup chicken broth

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp salt

  • ½ tsp black pepper

For the Sauce:

  • 1 cup barbecue sauce

  • ½ cup hot sauce (adjust to taste)

  • ¼ cup apple cider vinegar

  • 2 tbsp honey

  • 1 tbsp Worcestershire sauce

For Serving:

  • 6 hamburger buns

  • Coleslaw (optional)

  • Pickles (optional)

  • Sliced cheese (optional)


Instructions

Step 1: Prepare the Chicken

  1. Place the chicken breasts or thighs in the slow cooker or Instant Pot.
  2. Add chicken broth, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Cook on low for 6-7 hours in a slow cooker or on high pressure for 15 minutes in an Instant Pot.

Step 2: Shred the Chicken

  1. Once the chicken is cooked, remove it from the slow cooker or Instant Pot and place it in a large bowl.
  2. Use two forks or a meat shredder to shred the chicken into small pieces.

Step 3: Make the Sauce

  1. In a saucepan, combine barbecue sauce, hot sauce, apple cider vinegar, honey, and Worcestershire sauce.
  2. Heat the mixture over medium heat, stirring occasionally, until it thickens slightly (about 5-7 minutes).

Step 4: Combine Chicken and Sauce

  1. Add the shredded chicken to the saucepan and stir until the chicken is fully coated with the sauce.
  2. Let it simmer for 5-10 minutes to absorb the flavors.

Step 5: Assemble the Sandwiches

  1. Toast the hamburger buns lightly for extra flavor.
  2. Place a generous amount of shredded chicken on the bottom half of each bun.
  3. Top with coleslaw, pickles, or sliced cheese if desired.
  4. Cover with the top half of the bun and serve immediately.
