Instructions
Step 1: Prepare the Peaches
Start by washing, peeling, and slicing the peaches. Remove the pit and place the slices in a blender. If you prefer a very smooth Bellini, you can peel the skin for a silky texture.
Step 2: Blend the Peach Puree
Blend the peach slices until smooth. If your peaches are not very juicy, you may add 1–2 tablespoons of water or lemon juice. Add sweetener if desired. For a smoother texture, pass the puree through a fine mesh strainer.
