Dough:
- 2 cups all-purpose flour (+ extra for dusting)
- ¾ cup warm water (adjust as needed)
- ½ tsp salt
Filling & Frying:
- 1½ cups chopped scallions (green onions)
- 3 tbsp sesame oil (or vegetable oil)
- ½ tsp salt (for seasoning)
- ¼ cup vegetable oil (for frying)
Optional Dipping Sauce:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey or sugar
- ½ tsp chili oil (for spice)
- 1 clove garlic, minced
Instructions
Step 1: Make the Dough
- In a bowl, mix flour and salt.
- Gradually add warm water, stirring until a shaggy dough forms.
- Knead for 5-7 minutes until smooth. Cover and rest for 30 minutes.
Step 2: Prepare the Scallion Filling
- Wash and finely chop scallions.
- Mix with ½ tsp salt and set aside.
- Step 3: Roll & Layer the Dough
- Divide dough into 4-6 balls.
- Roll one ball into a thin rectangle.
- Brush with sesame oil, sprinkle scallions.
- Roll tightly into a log, then coil into a snail shape.
- Flatten again with a rolling pin.
Step 4: Fry to Crispy Perfection
- Heat 1-2 tbsp oil in a pan.
- Cook pancakes on medium heat for 2-3 mins per side until golden.
- Press lightly for crispiness.
Step 5: Serve Hot!
- Slice into wedges.
- Serve with dipping sauce.
