Ingredients

Dough:

  • 2 cups all-purpose flour (+ extra for dusting)
  • ¾ cup warm water (adjust as needed)
  • ½ tsp salt

Filling & Frying:

  • 1½ cups chopped scallions (green onions)
  • 3 tbsp sesame oil (or vegetable oil)
  • ½ tsp salt (for seasoning)
  • ¼ cup vegetable oil (for frying)

Optional Dipping Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or sugar
  • ½ tsp chili oil (for spice)
  • 1 clove garlic, minced

Instructions

Step 1: Make the Dough

  1. In a bowl, mix flour and salt.
  2. Gradually add warm water, stirring until a shaggy dough forms.
  3. Knead for 5-7 minutes until smooth. Cover and rest for 30 minutes.

Step 2: Prepare the Scallion Filling

  1. Wash and finely chop scallions.
  2. Mix with ½ tsp salt and set aside.
  3. Step 3: Roll & Layer the Dough
  4. Divide dough into 4-6 balls.
  5. Roll one ball into a thin rectangle.
  6. Brush with sesame oil, sprinkle scallions.
  7. Roll tightly into a log, then coil into a snail shape.
  8. Flatten again with a rolling pin.

Step 4: Fry to Crispy Perfection

  1. Heat 1-2 tbsp oil in a pan.
  2. Cook pancakes on medium heat for 2-3 mins per side until golden.
  3. Press lightly for crispiness.

Step 5: Serve Hot!

  1. Slice into wedges.
  2. Serve with dipping sauce.
