2 lbs (900g) beef chuck, cut into 1.5-inch cubes

Instructions
Trim any excess fat from the beef chuck and cut it into 1.5-inch cubes. Pat the beef dry with paper towels to ensure it sears properly.
Heat a skillet over medium-high heat and add 1 tablespoon of oil. Sear the beef cubes in batches until browned on all sides. This step adds depth of flavor but can be skipped if you’re short on time.
Place the chopped onions, garlic, ginger, and diced tomatoes at the bottom of the slow cooker. Add the seared (or raw) beef cubes on top.
In a small bowl, mix the curry powder, turmeric, cumin, coriander, paprika, chili powder, salt, and black pepper. Sprinkle this spice mixture over the beef. Pour in the beef broth, coconut milk, and tomato paste. Stir gently to combine.
Cover the slow cooker and cook on low heat for 7-8 hours or on high heat for 4-5 hours. If adding potatoes, add them halfway through the cooking time.
About 30 minutes before serving, stir in the frozen peas and red bell pepper (if using). This ensures they retain their texture and color.
Once the beef is tender and the sauce has thickened, your slow cooker beef curry is ready to serve!
