Instructions
Step 1: Marinate the Steak
- In a large mixing bowl, combine olive oil, lime juice, soy sauce, minced garlic, chili powder, cumin, smoked paprika, black pepper, and salt.
- Add the sliced steak to the marinade and toss to coat evenly.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
Step 2: Prepare the Vegetables
- While the steak is marinating, slice the bell peppers and onion into thin strips.
- Set aside until ready to cook.
Step 3: Cook the Steak
- Heat a large skillet or cast-iron pan over medium-high heat.
- Add 1 tbsp olive oil to the pan.
- Remove the steak from the marinade (shaking off excess) and cook for 2-3 minutes per side, or until browned and cooked to your desired level of doneness.
- Transfer the steak to a plate and let it rest for 5 minutes.
Step 4: Cook the Vegetables
- In the same skillet, add the sliced bell peppers and onions.
- Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
Step 5: Assemble the Fajitas
- Slice the rested steak into thin strips.
- Warm the tortillas in a dry skillet or wrap them in aluminum foil and heat in the oven.
- Fill each tortilla with steak strips, sautéed vegetables, and your favorite toppings like cilantro, sour cream, guacamole, and salsa.
