For the Fajitas:

  • 2 bell peppers (sliced into strips; use a mix of colors for visual appeal)

  • 1 large onion (sliced into strips)

  • 1 tbsp olive oil (for cooking)

  • 8 small flour tortillas (or corn tortillas for a gluten-free option)

For Serving:

  • Fresh cilantro (chopped)

  • Lime wedges

  • Sour cream or Greek yogurt

  • Guacamole or sliced avocado

  • Salsa or pico de gallo

  • Shredded cheese (optional)


Instructions

Step 1: Marinate the Steak

  1. In a large mixing bowl, combine olive oil, lime juice, soy sauce, minced garlic, chili powder, cumin, smoked paprika, black pepper, and salt.
  2. Add the sliced steak to the marinade and toss to coat evenly.
  3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 2: Prepare the Vegetables

  1. While the steak is marinating, slice the bell peppers and onion into thin strips.
  2. Set aside until ready to cook.

Step 3: Cook the Steak

  1. Heat a large skillet or cast-iron pan over medium-high heat.
  2. Add 1 tbsp olive oil to the pan.
  3. Remove the steak from the marinade (shaking off excess) and cook for 2-3 minutes per side, or until browned and cooked to your desired level of doneness.
  4. Transfer the steak to a plate and let it rest for 5 minutes.

Step 4: Cook the Vegetables

  1. In the same skillet, add the sliced bell peppers and onions.
  2. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

Step 5: Assemble the Fajitas

  1. Slice the rested steak into thin strips.
  2. Warm the tortillas in a dry skillet or wrap them in aluminum foil and heat in the oven.
  3. Fill each tortilla with steak strips, sautéed vegetables, and your favorite toppings like cilantro, sour cream, guacamole, and salsa.
