Instructions
Step 1: Prepare the Udon Noodles
- Bring a large pot of water to a boil.
- Add the udon noodles and cook according to the package instructions (usually 8-10 minutes for fresh or frozen udon).
- Drain the noodles in a colander and rinse them under cold water to remove excess starch. Set aside.
Step 2: Prepare the Sauce
- In a small bowl, combine soy sauce, oyster sauce, mirin, sesame oil, grated ginger, and minced garlic.
- Mix well and set aside.
Step 3: Stir-Fry the Protein and Vegetables
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
- Add the sliced chicken, beef, or shrimp and cook until browned and cooked through. Remove and set aside.
- In the same wok, add another tablespoon of oil.
- Add the sliced onion, cabbage, carrot, and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
Step 4: Combine Noodles, Protein, and Sauce
- Add the cooked udon noodles and protein back to the wok.
- Pour the prepared sauce over the noodles and toss everything together until well-coated and heated through.
Step 5: Garnish and Serve
- Transfer the Yaki Udon to serving plates.
- Garnish with chopped green onions, sesame seeds, and a sprinkle of shichimi togarashi if desired.
- Serve hot and enjoy!
