Main Ingredients

  • 400g (14 oz) udon noodles (fresh or frozen)

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)

  • 1 cup thinly sliced chicken breast, beef, or shrimp (optional for protein)

  • 1 medium onion, thinly sliced

  • 1 cup shredded cabbage

  • 1 medium carrot, julienned

  • 1 bell pepper, thinly sliced

  • 2 green onions, chopped

Sauce Ingredients

  • 3 tablespoons soy sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon mirin (or substitute with 1 teaspoon sugar)

  • 1 teaspoon sesame oil

  • 1 teaspoon grated ginger

  • 1 clove garlic, minced

Optional Toppings

  • Sesame seeds

  • Shichimi togarashi (Japanese chili powder)

  • Pickled ginger


Instructions

Step 1: Prepare the Udon Noodles

  1. Bring a large pot of water to a boil.
  2. Add the udon noodles and cook according to the package instructions (usually 8-10 minutes for fresh or frozen udon).
  3. Drain the noodles in a colander and rinse them under cold water to remove excess starch. Set aside.

Step 2: Prepare the Sauce

  1. In a small bowl, combine soy sauce, oyster sauce, mirin, sesame oil, grated ginger, and minced garlic.
  2. Mix well and set aside.

Step 3: Stir-Fry the Protein and Vegetables

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the sliced chicken, beef, or shrimp and cook until browned and cooked through. Remove and set aside.
  3. In the same wok, add another tablespoon of oil.
  4. Add the sliced onion, cabbage, carrot, and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Step 4: Combine Noodles, Protein, and Sauce

  1. Add the cooked udon noodles and protein back to the wok.
  2. Pour the prepared sauce over the noodles and toss everything together until well-coated and heated through.

Step 5: Garnish and Serve

  1. Transfer the Yaki Udon to serving plates.
  2. Garnish with chopped green onions, sesame seeds, and a sprinkle of shichimi togarashi if desired.
  3. Serve hot and enjoy!
