Instructions
Step 1: Prepare the Zucchini
- Wash and dry the zucchinis.
- Grate the zucchinis using a box grater or food processor.
- Place the shredded zucchini in a colander, sprinkle with salt, and let it sit for 10 minutes to draw out excess moisture.
Step 2: Squeeze Out Moisture
- Transfer the shredded zucchini to a cheesecloth or clean kitchen towel.
- Squeeze out as much liquid as possible. This step is crucial for achieving crispy fritters.
Step 3: Mix the Ingredients
- In a large mixing bowl, combine the shredded zucchini, flour, Parmesan cheese, egg, garlic, parsley, baking powder, black pepper, and paprika.
- Mix until well combined. The mixture should hold together when pressed.
Step 4: Shape the Fritters
- Heat 2 tablespoons of oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture and shape it into a small patty.
- Gently place the patty in the hot oil. Repeat to add more fritters, but avoid overcrowding the pan.
Step 5: Fry the Fritters
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
- Repeat with the remaining mixture, adding more oil to the skillet as needed.
