Instructions

Step 1: Prepare the Zucchini

  1. Wash and dry the zucchinis.
  2. Grate the zucchinis using a box grater or food processor.
  3. Place the shredded zucchini in a colander, sprinkle with salt, and let it sit for 10 minutes to draw out excess moisture.

Step 2: Squeeze Out Moisture

  1. Transfer the shredded zucchini to a cheesecloth or clean kitchen towel.
  2. Squeeze out as much liquid as possible. This step is crucial for achieving crispy fritters.

Step 3: Mix the Ingredients

  1. In a large mixing bowl, combine the shredded zucchini, flour, Parmesan cheese, egg, garlic, parsley, baking powder, black pepper, and paprika.

Step 4: Shape the Fritters
