Step 1: Soak the Beans π¦
Before you begin, make sure to soak the dried black beans in water overnight. This softens the beans and helps them cook faster.
Step 2: Brown the Meats π₯
In a large pot, heat some olive oil over medium heat. Add the bacon and pork shoulder chunks and brown them on all sides. Once browned, remove the meats and set them aside.
Step 3: SautΓ© the Aromatics π§
In the same pot, add the chopped onions and garlic. SautΓ© for about 3-4 minutes until the onions become translucent and fragrant.
Step 4: Add the Meats and Beans π₯
Return the browned pork, bacon, and sausage to the pot. Add the soaked black beans, chicken broth, and bay leaves. Stir to combine.
Step 5: Simmer and Cook Slowly π₯
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2-3 hours, stirring occasionally. The beans should soften, and the flavors will meld together beautifully.
