Salad Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 large English cucumber, diced
- 1 cup cherry tomatoes, halved
- Β½ small red onion, finely diced
- Β½ cup crumbled feta cheese
- ΒΌ cup fresh parsley, chopped
- 2 tablespoons fresh mint (optional)
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar or lemon juice
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
π₯ Step 1: Prepare the Ingredients
Drain and rinse the chickpeas under cold water. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion, parsley, and mint.
π₯£ Step 2: Make the Dressing
In a small bowl or jar, whisk together olive oil, vinegar (or lemon juice), Dijon mustard, minced garlic, salt, and black pepper until well combined.
π₯ Step 3: Combine Everything
In a large bowl, mix chickpeas, cucumbers, cherry tomatoes, onion, parsley, and mint. Pour the dressing over and toss gently until evenly coated.
π§ Step 4: Add the Feta
Gently fold in the crumbled feta cheese. Be careful not to break it too much β you want some nice creamy chunks.
