Ingredients
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar (or white wine vinegar, balsamic vinegar, or lemon juice)
- 2 cloves garlic, minced or pressed
- 1 teaspoon Dijon mustard (optional, for creaminess)
- 1 teaspoon honey or maple syrup (optional, for sweetness)
- 1/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper (freshly ground)
- 1/4 teaspoon dried oregano or thyme (optional, for added flavor)
Instructions
Peel and finely mince the garlic cloves. For a smoother texture, use a garlic press or grate the garlic.
In a small mixing bowl or jar, add the red wine vinegar, Dijon mustard (if using), and honey or maple syrup. Whisk or shake until well combined.
Stir in the minced garlic, salt, black pepper, and dried herbs (if using). Mix thoroughly to infuse the flavors.
Slowly drizzle in the extra virgin olive oil while whisking continuously. This helps create a smooth, emulsified dressing. If using a jar, add the oil, seal the lid, and shake vigorously.
Taste the dressing and adjust the seasoning as needed. Add more salt, pepper, or vinegar to suit your preferences.
