Step 1: Prepare the Mixture
- In a large bowl, combine ground chicken, breadcrumbs, feta, egg, parsley, dill, oregano, garlic, red onion, lemon zest, salt, and pepper. Mix gently (don’t overwork).
Step 2: Shape the Meatballs
- Use a cookie scoop or hands to form 1.5-inch meatballs (~20 total). Place on a parchment-lined tray.
Step 3: Cook (Choose Your Method)
Option 1: Bake (Healthier)
- Preheat oven to 400°F (200°C).
- Bake for 18-20 mins until golden and internal temp reaches 165°F (74°C).
Option 2: Pan-Fry (Crispier)
- Heat 1 tbsp olive oil in a skillet.
