Instructions
Step 1: Boil the Spaghetti
- Fill a large pot with water and add 1 tbsp of salt. Bring it to a rolling boil.
- Add the spaghetti and cook according to the package instructions until al dente (usually 8-10 minutes).
- Once cooked, drain the pasta in a colander and toss it with 1-2 tbsp of olive oil to prevent sticking. Set aside.
Step 2: Prepare the Green Sauce
- In a blender or food processor, combine the spinach, basil, parsley, garlic, Parmesan cheese, and pine nuts (if using).
- Pulse until the ingredients are finely chopped.
- While blending, slowly drizzle in the olive oil and heavy cream until the mixture becomes smooth and creamy.
- Season with salt and pepper to taste.
Step 3: Combine Pasta and Sauce
- Heat a large skillet over medium heat. Add the cooked spaghetti to the skillet.
- Pour the green sauce over the pasta and toss gently to coat every strand evenly.
- Cook for 2-3 minutes, stirring occasionally, until the pasta is heated through.
Step 4: Adjust Seasoning
- Taste the pasta and adjust the seasoning if needed. Add more salt, pepper, or Parmesan cheese as desired.
Step 5: Serve and Garnish
- Transfer the Green Spaghetti to serving plates or a large platter.
- Garnish with extra Parmesan cheese, fresh basil leaves, and a sprinkle of red chili flakes for a touch of heat.
