  • Salt and pepper to taste

For Garnish:

  • Extra Parmesan cheese

  • Red chili flakes (optional)

  • Fresh basil leaves


Instructions

Step 1: Boil the Spaghetti

  1. Fill a large pot with water and add 1 tbsp of salt. Bring it to a rolling boil.
  2. Add the spaghetti and cook according to the package instructions until al dente (usually 8-10 minutes).
  3. Once cooked, drain the pasta in a colander and toss it with 1-2 tbsp of olive oil to prevent sticking. Set aside.

Step 2: Prepare the Green Sauce

  1. In a blender or food processor, combine the spinach, basil, parsley, garlic, Parmesan cheese, and pine nuts (if using).
  2. Pulse until the ingredients are finely chopped.
  3. While blending, slowly drizzle in the olive oil and heavy cream until the mixture becomes smooth and creamy.
  4. Season with salt and pepper to taste.

Step 3: Combine Pasta and Sauce

  1. Heat a large skillet over medium heat. Add the cooked spaghetti to the skillet.
  2. Pour the green sauce over the pasta and toss gently to coat every strand evenly.
  3. Cook for 2-3 minutes, stirring occasionally, until the pasta is heated through.

Step 4: Adjust Seasoning

  1. Taste the pasta and adjust the seasoning if needed. Add more salt, pepper, or Parmesan cheese as desired.

Step 5: Serve and Garnish

  1. Transfer the Green Spaghetti to serving plates or a large platter.
