Ingredients
Scale
- 1 large green cabbage – Choose firm, compact heads.
- 3 tablespoons olive oil – Or avocado oil for higher heat.
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 tablespoon balsamic vinegar (optional, for drizzle)
- Fresh herbs – Such as parsley or thyme for garnish
- Parmesan cheese or nutritional yeast – Optional for topping
Optional Flavor Add-ins:
- Crushed red pepper flakes (for heat)
- Lemon juice or zest (for brightness)
- Tahini or herbed yogurt sauce (for dipping)
Instructions
🔥 Step 1: Prepare the Cabbage
- Remove any wilted or damaged outer leaves.
- Cut off the bottom stem just enough to create a flat base, but don’t remove the core—this helps keep each slice intact.
- Slice the cabbage into 1-inch thick rounds. You should get 4–6 “steaks” depending on cabbage size.
🧴 Step 2: Season Generously
- In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper.
- Brush both sides of the cabbage steaks with the seasoned oil mixture.
- Let them sit for 5–10 minutes so the flavors soak in.
🔥 Step 3: Heat the Grill
- Preheat your grill to medium-high heat (around 400°F / 204°C).
- Clean and oil the grates to prevent sticking.
🔥 Step 4: Grill the Steaks
- Place cabbage slices directly on the grill grates.
- Grill for about 5–6 minutes per side, or until charred and tender.
- Use tongs to carefully flip each steak halfway through.
- Close the lid to cook more evenly and soften the interior.
🍽️ Step 5: Serve & Garnish
- Remove from grill and place on a serving platter.
- Optionally, drizzle with balsamic vinegar or lemon juice.
- Sprinkle with fresh herbs, Parmesan, or red pepper flakes.
