  • 1/4 tsp black pepper

For the Salad:

  • 4 cups mixed greens (spinach, romaine, or arugula)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, thinly sliced

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 1/4 cup cilantro, chopped

For the Dressing:

  • 3 tbsp olive oil

  • 2 tbsp fresh lime juice

  • 1 tsp honey

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • Salt and pepper to taste


Instructions

Step 1: Marinate the Chicken

  1. In a mixing bowl, combine olive oil, lime juice, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated.
  3. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 2: Grill the Chicken

  1. Preheat your grill or grill pan to medium-high heat.
  2. Remove the chicken from the marinade and place it on the grill.
  3. Cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  4. Let the chicken rest for 5 minutes before slicing it into strips.

Step 3: Prepare the Salad Base

  1. In a large salad bowl, combine the mixed greens, sliced bell peppers, red onion, cherry tomatoes, and avocado.
  2. Toss gently to mix the ingredients.

Step 4: Make the Dressing

  1. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper.
  2. Adjust seasoning to taste.

Step 5: Assemble the Salad

  1. Add the grilled chicken strips on top of the salad.
  2. Drizzle the dressing over the salad and garnish with chopped cilantro.
  3. Toss lightly before serving.
