For the Muffin Buns:

Instructions
Step 1: Prepare the Muffin Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the egg, then mix in the buttermilk, melted butter, and maple syrup. Combine the wet and dry ingredients just until mixed. If using, fold in the maple syrup chips.
Step 2: Cook the Muffin Buns
Preheat a griddle or non-stick skillet over medium heat. Grease a set of metal mason jar lids (rings only) or silicone egg molds to shape the batter. Place the rings on the griddle and pour in 2-3 tablespoons of batter. Cook until bubbles form and edges begin to set, about 2–3 minutes. Flip carefully and cook another 1–2 minutes. Remove and repeat to make 12 rounds (6 muffins).
Step 3: Cook the Sausage Patties
While the muffin buns cool, cook the sausage patties in a skillet over medium heat until browned and cooked through (internal temp 160°F). Set aside on a paper towel-lined plate to drain excess grease.
Step 4: Make the Egg Rounds
Crack each egg into a greased egg mold or mason jar ring over medium-low heat. Poke the yolk if desired for an even texture. Season with salt and pepper. Cover with a lid and cook for 3–4 minutes until set. Remove carefully and set aside.
Step 5: Assemble the McGriddle Muffins
Start with a muffin bottom, place a slice of cheese, followed by the sausage patty and egg round. Top with another muffin bun. Optional: drizzle with maple syrup before closing or serve syrup on the side.
