Ingredients
Scale
-
2 cups pre-cooked cornmeal (masarepa)
-
2 ½ cups warm water
-
1 teaspoon salt
-
1 ½ cups shredded cheese (queso fresco, mozzarella, or your favorite melting cheese)
-
1 tablespoon butter or oil (for cooking)
Instructions
Step 1: Prepare the Dough
- In a mixing bowl, combine the pre-cooked cornmeal (masarepa) and salt.
- Gradually add warm water while mixing with your hands until a soft, pliable dough forms.
- Let the dough rest for 5 minutes to absorb the moisture.
Step 2: Shape the Arepas
- Divide the dough into 8 equal portions.
- Roll each portion into a ball, then flatten it into a disc about ½-inch thick.
- Make a small indentation in the center of each disc and stuff it with 1-2 tablespoons of shredded cheese.
- Seal the edges carefully to ensure the cheese doesn’t leak during cooking.
Step 3: Cook the Arepas
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
- Place the arepas on the skillet and cook for 5-7 minutes on each side, or until golden brown and crispy.
- Press gently with a spatula to ensure even cooking.
Step 4: Serve Warm
- Remove the arepas from the skillet and let them cool for 1-2 minutes.
- Slice them open to reveal the melted cheese and serve immediately.
