  • 2 tablespoons balsamic vinegar (or red wine vinegar)
  • 1 teaspoon Dijon mustard (optional, for added depth)
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup fresh mozzarella cheese, cubed (optional, for a Caprese-style twist)
  • 1 tablespoon capers (optional, for a briny flavor)

Instructions

Step 1: Prepare the Tomatoes

  1. Wash the tomatoes thoroughly and pat them dry. Slice them into wedges or thick rounds, depending on your preference. Place them in a large mixing bowl.

Step 2: Slice the Red Onion

  • Peel the red onion and slice it thinly. Add the slices to the bowl with the tomatoes.

Step 3: Make the Dressing

  • In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Dijon mustard (if using), salt, and pepper. Adjust the seasoning to taste.

Step 4: Combine the Ingredients

  • Pour the dressing over the tomatoes and onions. Gently toss to coat everything evenly.

Step 5: Add Fresh Basil and Optional Ingredients

  • Tear or chop the fresh basil leaves and add them to the salad. If using mozzarella or capers, add them at this stage.

Step 6: Serve and Enjoy

  • Transfer the salad to a serving platter or bowl. Let it sit for 10-15 minutes to allow the flavors to meld. Serve fresh and enjoy!
