Instructions
Peel and thinly slice the red onions. You can use a sharp knife or a mandoline slicer for even, thin slices.
In a saucepan, combine the vinegar, water, sugar, and salt. Heat over medium heat until the sugar and salt dissolve completely. Do not boil the mixture.
Place the sliced onions into a clean mason jar or airtight glass container. If using, add peppercorns, bay leaf, or red pepper flakes for extra flavor.
Carefully pour the warm pickling brine over the onions, ensuring they are fully submerged.
Let the jar cool to room temperature, then seal it with a lid. Refrigerate for at least 1 hour before using. For best results, let them sit overnight.
