Ingredients
-
4 cups finely chopped pickles (dill or sweet, depending on your preference)
-
1 cup finely chopped red bell pepper
-
1/2 cup finely chopped onion
-
2–3 fresh chili peppers (jalapeño or serrano, seeded and finely chopped)
-
1 cup granulated sugar
-
1 cup apple cider vinegar
-
1 teaspoon mustard seeds
-
1/2 teaspoon turmeric powder
-
1/2 teaspoon celery seeds
-
1/4 teaspoon red chili flakes (optional, for extra heat)
-
Salt and black pepper to taste
Instructions
Step 1: Prepare the Vegetables
Finely chop the pickles, red bell pepper, onion, and chili peppers. Ensure the pieces are uniform in size for a consistent texture.
Step 2: Combine Ingredients
In a large mixing bowl, combine the chopped pickles, red bell pepper, onion, and chili peppers. Mix well.
Step 3: Cook the Relish
In a medium saucepan, combine the sugar, apple cider vinegar, mustard seeds, turmeric powder, celery seeds, and red chili flakes. Bring the mixture to a boil over medium heat, stirring occasionally.
Step 4: Add Vegetables
Once the liquid mixture is boiling, add the chopped vegetables. Reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the relish thickens.
Step 5: Cool and Store
Remove the saucepan from the heat and let the relish cool completely. Transfer it to sterilized jars or airtight containers. Store in the refrigerator for up to 2 weeks or follow proper canning procedures for long-term storage.
