  • 1 cup cooked quinoa (cooled)

  • 1 cup chopped cucumber

  • 1/2 cup crumbled feta cheese

  • 1/4 cup toasted pistachios (or almonds)

  • 1 can chickpeas (rinsed and drained)

  • 2 cups arugula or mixed greens

For the Dressing:

  • 3 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon Dijon mustard

  • 1 clove garlic (minced)

  • Salt and pepper to taste


Instructions

Step 1: Prepare the Quinoa

  1. Rinse 1 cup of quinoa under cold water to remove bitterness.
  2. Cook the quinoa according to package instructions.
  3. Once cooked, let it cool completely.

Step 2: Chop the Vegetables

  1. Dice the cucumber into small cubes.
  2. Halve the cherry tomatoes.
  3. Finely chop the red onion, parsley, and mint leaves.

Step 3: Toast the Nuts

  1. Heat a small pan over medium heat.
  2. Add the pistachios (or almonds) and toast for 2-3 minutes until fragrant.
  3. Let them cool before adding to the salad.

Step 4: Prepare the Dressing

  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  2. Set aside.

Step 5: Assemble the Salad

  1. In a large mixing bowl, combine the cooled quinoa, cucumber, cherry tomatoes, red onion, parsley, mint, chickpeas, and arugula.
  2. Add the crumbled feta cheese and toasted nuts.
  3. Drizzle the dressing over the salad and toss gently to combine.
