Instructions
Step 1: Prepare the Quinoa
- Rinse 1 cup of quinoa under cold water to remove bitterness.
- Cook the quinoa according to package instructions.
- Once cooked, let it cool completely.
Step 2: Chop the Vegetables
- Dice the cucumber into small cubes.
- Halve the cherry tomatoes.
- Finely chop the red onion, parsley, and mint leaves.
Step 3: Toast the Nuts
- Heat a small pan over medium heat.
- Add the pistachios (or almonds) and toast for 2-3 minutes until fragrant.
- Let them cool before adding to the salad.
Step 4: Prepare the Dressing
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
- Set aside.
Step 5: Assemble the Salad
- In a large mixing bowl, combine the cooled quinoa, cucumber, cherry tomatoes, red onion, parsley, mint, chickpeas, and arugula.
- Add the crumbled feta cheese and toasted nuts.
- Drizzle the dressing over the salad and toss gently to combine.
