Ingredients
Chicken
- 4 boneless, skinless chicken breasts (medium to large)
- Salt and black pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tbsp olive oil (for searing)
Filling
- 1 cup shredded mozzarella cheese
- ½ cup cream cheese, softened
- ¼ cup grated Parmesan cheese
- 1 cup fresh spinach (chopped)
- 1 tsp minced garlic
- ½ tsp onion powder
- Optional: diced sun-dried tomatoes or cooked crumbled bacon
Optional Garnish
- Fresh parsley
- Shredded Parmesan
- Chili flakes
Instructions
Step 1: Prepare the Chicken
Using a sharp knife, slice each chicken breast horizontally to create a pocket, making sure not to cut all the way through. Season the inside and outside with salt, pepper, paprika, and garlic powder.
Step 2: Make the Filling
In a mixing bowl, combine mozzarella, cream cheese, Parmesan, chopped spinach, minced garlic, and onion powder. Mix until well combined. This creamy filling will ensure every bite is bursting with flavor.
Step 3: Stuff the Chicken
Carefully spoon the cheese and spinach filling into each chicken breast pocket. Use toothpicks to secure the edges if needed, ensuring the filling stays inside during cooking.
Step 4: Sear the Chicken
Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts on both sides until golden brown (about 3-4 minutes per side). This step locks in flavor and gives a nice crust.
Step 5: Bake to Perfection
Transfer the seared chicken to a baking dish or oven-safe skillet. Bake at 375°F (190°C) for 20–25 minutes, or until internal temperature reaches 165°F (74°C). Let it rest for 5 minutes before slicing and serving.
