Instructions
Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, then dust it with flour to prevent sticking.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
Beat in the eggs one at a time, ensuring each is fully incorporated. Mix in the sour cream, key lime juice, key lime zest, and vanilla extract.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack. Once completely cool, drizzle the glaze over the top.
