  • 1 cup powdered sugar
  • 1 tbsp lemon zest
  • ⅓ cup fresh lemon juice (about 2 lemons)
  • 1 tsp vanilla extract
  • 8 oz whipped topping (Cool Whip) or homemade whipped cream

For the Topping (Optional):

  • Lemon slices
  • Whipped cream swirls
  • Blueberries or raspberries

Instructions

Step 1: Prepare the Crust

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  2. Press firmly into a 9-inch pie dish, covering the bottom and sides.
  3. Chill for 15 minutes to set.

Step 2: Make the Cream Cheese Filling

  1. Using an electric mixer, beat cream cheese until smooth.
  2. Add powdered sugar, lemon zest, lemon juice, and vanilla. Mix well.
  3. Gently fold in whipped topping until fully incorporated.

Step 3: Assemble the Pie

  1. Pour filling into the chilled crust.
  2. Smooth the top with a spatula.
