Ingredients
- 1 lb. fresh lump crab meat (preferably from Maryland)
- 1/4 cup mayonnaise
- 1 large egg
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1/2 tsp Old Bay seasoning (optional, but highly recommended for authenticity)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
- 1/4 cup breadcrumbs (preferably Panko for extra crunch)
- 1 tbsp lemon juice
- 2 tbsp unsalted butter (for frying)
Instructions
Step 1: Prepare the Crab Meat
Begin by gently picking through the crab meat to remove any bits of shell or cartilage. It’s important to keep the lumps of crab intact to preserve the texture. Place the crab meat in a large mixing bowl.
Step 2: Combine Wet Ingredients
In a separate small bowl, whisk together the mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, and Old Bay seasoning (if using). This mixture will bind the crab meat and give the cakes their rich flavor.
Step 3: Add Breadcrumbs and Seasoning
Fold the wet ingredients into the crab meat. Then, add the breadcrumbs, parsley, salt, and pepper. Be careful not to overwork the mixture to keep the crab cakes light and delicate. The breadcrumbs should help bind everything without making the cakes too dense.
Step 4: Form the Crab Cakes
With your hands, gently form the crab mixture into patties. You can make the cakes as large or as small as you prefer. For a more traditional Maryland style, aim for about 3 to 4 inches in diameter and about 1-inch thick. Place the cakes on a shallow plate or tray.
Step 5: Fry the Crab Cakes
Heat a skillet over medium heat and melt the butter. Carefully add the crab cakes to the pan and cook for about 3 to 4 minutes per side or until golden brown and crispy. If you’re baking them, place the cakes on a parchment-lined baking sheet and bake at 375°F for about 15-20 minutes, flipping halfway through.
