Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a medium bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy.
Using a cookie scoop or spoon, portion out the cookie dough into balls (about 1.5 tablespoons each). Flatten each ball slightly and make an indentation in the center. Fill each indentation with about 1 teaspoon of the cheesecake filling.
Place the cookies on the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
