Instructions
Step 1: Prepare the Cod
- Pat the cod fillets dry with paper towels to remove excess moisture.
- Season both sides of the fillets with salt, black pepper, paprika, and garlic powder. Set aside.
Step 2: Sear the Cod
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Once the oil is hot, carefully place the cod fillets in the pan. Sear for 3-4 minutes on each side, or until golden brown.
- Remove the cod from the skillet and set aside on a plate.
Step 3: Prepare the Tomato Basil Sauce
- In the same skillet, add 2 tablespoons of olive oil.
- Sauté the chopped onion until translucent (about 2-3 minutes).
- Add the minced garlic and cook for another 1-2 minutes, stirring frequently to avoid burning.
- Pour in the diced tomatoes, vegetable or fish stock, dried oregano, and red pepper flakes (if using). Stir to combine.
- Simmer the sauce for 5-7 minutes, allowing the flavors to meld together.
Step 4: Combine Cod and Sauce
- Gently place the seared cod fillets back into the skillet, nestling them into the tomato basil sauce.
- Spoon some of the sauce over the fillets to ensure they’re well-coated.
- Cover the skillet and let the cod cook in the sauce for an additional 5 minutes, or until the fish is fully cooked and flakes easily with a fork.
Step 5: Garnish and Serve
- Sprinkle freshly chopped basil over the dish for a burst of flavor and color.
- Serve immediately with your choice of sides.
